This week, I prepared a New Year-themed pavlova for you all. It's very easy to make. I decorated mine with red fruits, but you can decorate yours with your favorite fruits, chocolate, colorful candies, or anything else you like. I leave the rest to your creativity.
PAVLOVA
5 egg whites
¼ teaspoon salt
250g powdered sugar
1 teaspoon vanilla extract
Cream:
250ml milk
2 egg yolks
50g sugar
20g cornstarch
20g flour
100g white chocolate couverture
100ml cream
300g mixed red fruits
Mint leaves
Preheat the oven to 100 degrees Celsius. Beat the egg whites with salt at high speed for 5 minutes until they become shiny. Gradually add the powdered sugar while continuing to beat. Draw a circle about 25 cm in diameter on parchment paper. Here's where your creativity can come into play. You can draw the shape of your serving plate or any figure you have in mind (I particularly love making heart shapes) to create your unique pavlova. Pour the mixture into the shape you've drawn. The stiff peaks will make the pavlova look more elegant, so avoid smoothing the shape. Use a spoon to create a hollow in the center for the cream. Bake in the preheated oven for 2 hours..
After removing it from the oven, you can fill the center with your own cream recipe. Here's the recipe for the cream that I often make and everyone loves: Heat milk, vanilla, and sugar. Mix egg yolks with flour and cornstarch, then slowly add to the warm milk mixture, stirring quickly. Cook until thickened. Remove from heat and add chopped white chocolate. Transfer to a large bowl, cover with plastic wrap, and let it cool. Once cooled, whip with cream at high speed until smooth. Fill the center of the pavlova with the cream. Arrange the fruits on top and garnish with mint leaves.
